PRODUCTION AREA: Loc. Villa a Sesta, Castelnuovo Berardenga (SI), Tuscany
HARVEST: Late October. In the first half of October when the wine grapes are harvested, the best, sparse and small bunches are left in the vineyard to overripe them until harvesting after 2-4 weeks depending on the seasonal trend. Successively the grapes are dried naturally in ventilated rooms until the established parameters are reached.
WINEMAKING: After a selection of the dried grapes and a soft pressing, the vinification takes place in stainless steel at controlled temperature (15/16°) with a partial maceration of the skins which are separated after a few days from the start of fermentation which is left to develop until
to achieve a good balance between alcohol and sugar content.
COLOR: Intense antique pink tending to amber
SMELL: Characteristic, complex, intense and persistent with hints of cooked fruit, candied fruit and honey enhanced by its alcohol content.
FLAVOR: Sweet, full and harmonious. Its intensity and structure give it an excellent final persistence.
PAIRING: Extraordinary dessert wine, it goes well with all the dry and fresh confectionery products of the Tuscan tradition but it can also be combined very well with short and medium aged pecorino.
