IGT Rosato “Meticcio” 2021 (BIO)
PRODUCTION ZONE: Loc. Villa a Sesta, Castelnuovo Berardenga, 420m s.l.m.
HARVEST: end of September-beginning of October, when the phenolic and technological maturity in the Sangiovese, Canaiolo nero and Colorino grapes is completely reached.
VINIFICATION: the must is extracted by immediate pressing of the de-stemmed grapes, without any day of maceration on the skins since otherwise too much color would be extracted from the skins. It carries out the alcoholic fermentation in stainless steel tanks at a controlled temperature for about 20 days.
ORGANOLEPTIC NOTES: it has a pale pink color with ruby reflections, very perceptible fruits and flowers on the nose that alternate with elegance accompanied by light mineral tones. On the palate the beautiful fatness and the right acidity make the wine enjoyable and fresh.
SERVING SUGGESTION: It can be used as an aperitif or in combination with first and second courses of fish as well as white meats.
