VINSANTO OCCHIO DI PERNICE
NAME:The Vin Santo Occhio di Pernice
The Vin Santo Occhio di Pernice differs from Vin Santo Bianco because it is made by using the red varieties of grapes, generally Sangiovese, Malvasia Nera and/or Canaiolo; the production methodology is instead identical. The harvest is performed with great care: the selected bunches, in fact, must be healthy, ie able to dry for weeks, if not for months, without deterioration. Harvest: The grapes are harvested by hand in small boxes.
Winemaking: The grapes are spread in the drier on small boxes where they remain to dry for six months. Following on from drying, they are gently pressed and after a 24 hours of decantation the must is transferred in oak and chestnut barrels for a slow and natural fermentation, with the addition of the indigenous yeast, called “mother”. The wine is ready not earlier than 3 years of aging in wood, when it is carefully poured off, decanted and bottled without filtering to keep all its richness of aromas and flavors.

Tasting Notes: amber color, rich and concentrated with a long persistence and enveloping aromas of bitter almonds and candied fruit, this sweet wine never ceases to amaze with new taste sensations. Sweet and warm, with elegant almond, dried figs and vanilla aftertaste. The finish is very complex and persistent. From very long aging in the bottle.
Serving suggestions: Ideal with homemade cakes and almond biscuits. Great by itself as a meditation wine.
